TRIPES/MATUMBO CURRY

  INGREDIENTS   1kg matumbo Rosemary garam masala dry thyme salt 2 finely chopped tomatoes 1/2green bell pepper 1tsp tomatoe paste 1tsp curry powder water 1tsp oil 1chopped onion 1 tsp fresh garlic paste INSTRUCTIONS   1.Wash the tripes thoroughly Cut into desired pieces.In it add rosemary garam masala, dry thyme and salt mix this together  and put to  boil until soft. 2.For the Curry  sauce Put  the bell pepper, tomatoes,tomatoe paste and curry powder then add a little water, put them in a blender and  make sure it blends till smooth. 3.In a heating pan add 1 tsp oil, add onions and garlic paste stir until everything is well cooked. 4.Add the  blended curry paste.  stir well then bit by bit add the  matumbo.Leave it to cook for about 10 minutes or until the sauce is thick and not  watery. 5.Garnish with  fresh chopped parsley  serve with ugali rice or chapati.

Soft layered chapatis Kenyan way

  The very first time I made  chapatis...🤣🤣🤣🤣  I was in class 5, I was  so  eager to learn cooking..it turned out bad... Everyone was fighting for a space by the wall.. because of the way the chapatis were hard... 🤣🤣🤣 This happened severally because my mum could just decide to buy everything needed bring  it to the kitchen then disappear I'm glad after the all the attempts of trial and error today I can make good chapatis . INGREDIENTS 6 cups all purpose flour 1tspsalt 2tsp sugar( optional) vegetable oil. INSTRUCTIONS 1.In a large clean bowl mix the flour, salt,sugar, and mix it well. go ahead  and  sieve  it to avoid  lumps. this  helps to get everything wel incorporated and make the flour have a soft texture. 2.Add cup of warm water to the flour( in bits) knead well for about 10mins until the dough is not too sticky on hands,add oil and  keep kneading for about 2 minutes, this helps in keeping the dough soft.ThenLet ...

BANANA CAKE ( simple and easy to make)

  INGREDIENTS 3  ripe bananas 1/2cup sugar 1/4 cup vegetable oil 1egg 1tsp of vanilla essence. 11/2 all purpose flour 1tsp baking soda 1tsp baking soda 1tsp cinnamon 1/2tsp salt INSTRUCTIONS   1. peeled the bananas put In a bowl   then use  a      potato masher or fork. mash until it gets soft..      like paste. 2. Add vanilla essence, vegetable oil and egg to the  mashed bananas   Using a whisk mix everything nicely until well incorporated 3.  In a  clean  bowl put together the flour,sugar, baking soda baking powder , cinnamon then salt mix them well until everything is well combined  5.Add  the flour mixture to the wet ingredients put together  6.Once the batter is smooth.pour it on a baking sheet lined with a parchment paper.   7.Bake  at 180deegres  for about 25-30 minutes         Ready to serve with your favorite tea, 

BUTTERNUT SQUASH SOUP

    INGREDIENTS 1 medium butternut squash 1tsp oil medium sized white onion( diced) salt to taste 1tsp black pepper 3 cloves of garlic 1tsp rosemary 1tsp of ginger 1cup water 1 cup coconut milk     INSTRUCTIONS   1. peel the  butternut, cut it in the middle  then remove the seeds. 2. Wash  then Cut into small chunks  put in  a clean  Bowl then set aside. 3. On a cooking pan heat  oil  then add onions,cook it for a minute  or until its saute 4. Add salt and black pepper, Stir well then   add ginger. garlic.and rosemary let it  cook until it starts browning 5. Add butternut pieces bit by bit .making sure everything is nicely mixed 6. Add   water  and coconut milk( the coconut milk makes it more creamier.. and tastier) 7. Leave to simmer for about  25 -30 minutes until the squash is tender. 8. When it's ready transfer everything into a blender .. blend it until smooth...
