BUTTERNUT SQUASH SOUP

 





  INGREDIENTS

1 medium butternut squash
1tsp oil
medium sized white onion( diced)
salt to taste
1tsp black pepper
3 cloves of garlic
1tsp rosemary
1tsp of ginger
1cup water
1 cup coconut milk

    INSTRUCTIONS 

1. peel the  butternut, cut it in the middle  then remove the seeds.

2. Wash  then Cut into small chunks  put in  a clean  Bowl then set aside.

3. On a cooking pan heat  oil  then add onions,cook it for a minute  or until its saute
4. Add salt and black pepper, Stir well then   add ginger. garlic.and rosemary let it  cook until it starts browning

5. Add butternut pieces bit by bit .making sure everything is nicely mixed

6. Add   water  and coconut milk( the coconut milk makes it more creamier.. and tastier)

7. Leave to simmer for about  25 -30 minutes until the squash is tender.

8. When it's ready transfer everything into a blender .. blend it until smooth.

        Ready to serve. with burgeretts top   with    
coconut milk, fresh parsley  and toasted   pumpkin seeds.
