TRIPES/MATUMBO CURRY

 


INGREDIENTS 

1kg matumbo

Rosemary

garam masala

dry thyme

salt

2 finely chopped tomatoes

1/2green bell pepper

1tsp tomatoe paste

1tsp curry powder

water

1tsp oil

1chopped onion

1 tsp fresh garlic paste


INSTRUCTIONS 

1.Wash the tripes thoroughly Cut into desired pieces.In it add rosemary garam masala, dry thyme and salt mix this together  and put to  boil until soft.

2.For the Curry  sauce
Put  the bell pepper, tomatoes,tomatoe paste and curry powder then add a little water, put them in a blender and  make sure it blends till smooth.

3.In a heating pan add 1 tsp oil, add onions and garlic paste stir until everything is well cooked.

4.Add the  blended curry paste.  stir well then bit by bit add the  matumbo.Leave it to cook for about 10 minutes or until the sauce is thick and not  watery.

5.Garnish with  fresh chopped parsley  serve with ugali rice or chapati.
