A Simple Delicious Fish gravy/ wet fry. the kenyan way

INGREDIENTS.
1 whole fish( tilapia)1chopped onion
fresh coriander leaves
3-4 tomatoes
1tsp tomato paste
salt to taste.
2tsp oil
INSTRUCTIONS.
1.Lets started with the fresh fish... First of all heat enough oil in a big pan. this is to avoid the fish cutting into pieces while turning it. while the oil is heating, thoroughly wash the fish, dry it up then cut slits through it on both sides and sprinkle with salt.

2.Deep fry the fish until its ready. Not too soft and not too hard.plus make sure not to turn it before the first side halfway done by that it may cut or spoil meanwhile..
3.For the gravy heat oil in a pan.. add tomatoes.. just saute then then add tomatoes .. and tomatoe paste let it cook a little bit then add coriander leaves..
now let it simmer until oil starts oozing out.. that's when we know the gravy is ready.
4 put in the fish.. turn it on both sides on the gravy...and let's the steam enter it a little bit.
Ready to serve
This delicacy can best go with ugali or fried potatoes.
