Lemon cake( simple )
INGREDIENTS
2 cups all purpose flour ( extra for the baking tin.
1tsp baking powder
11/2 tsp salt
1/2 cup sugar
1 cup margarine
3 eggs( at room temperature)
1 cup buttermilk( mala)
1tsp vanilla essence.
1tsp grated lemon
1 cup butter milk
1/4 cup lemon juice
PROCEDURE
1. In a large bow mix together the 2 cups of flour, baking powder and salt. then sieve
2. In another bowl whisk the margarine and sugar until white and fluffy,
3. beat in the eggs one at a time...add in the vanilla essence and whisk for everything to come together
4. Add in the dry ingredients gradually .mix in the flour whisk until smooth
5.Add the lemon juice and lemon Zest
6.Add the butter milk bit by bit.. and whisk for everything to be well combined
7.Preheat the oven for 10 minutes at 175 degrees. Meanwhile Butter the baking tin and dust with flour tapping out the excess.
8.Put in the cake mixture in the baking tin.. Let it bake for 40-50 minutes until the cake is lightly browned on top.. and a toothpick inserted in the middle comes out clean.
Let it cool for 20 minutes and serve with a drink. Enjoy 😋
