CHICKEN BIRYANI

 



                                              For chicken Biryani .. there are two ways. to get your biryani  together
1 Add  the spices together with the tomatoes  to cook together with the meat
2 Add  the spices into the meat for marination.then  cook later on. 
 
CHICKEN MARINATION STEPS 
1. In a  clean bowl add plain yogurt or unsweetened  mala  to  the chicken.add ginger,     garlic,rosemary and fried onions.
2.Add in dry thyme
                 turmeric
                 cardamom
                 black pepper
cinnamon and chilli/pepper paste. then mix it  up with a lemon juice.
N/B the longer the marination process the  deeper the chicken will be flavored
 
FRYING ONIONS 
  Deep fry 4 large chopped onions in oil until golden brown, drain and set aside

INSTRUCTIONS 

1.In a  heating pan add vegetable oil, then add   1 cut uncooked onion allow this to cook until  its     saute.
2.Add tomatoes, a table spoon of tomato paste,bay leaves then add a little  water,.allow this to    simmer for  up to 15 minutes until the tomatoes are  completely  cooked.
3.Go in with the chicken marinade.then add plain yogurt and fried onions. Allow to simmer until  the chicken is cooked through.

RICE COOKING
1.In  4 cups  of boiling water add 1 tsp of oil, small portions of whole cloves,cardamom  and cumin seeds, 
2.Then add the already washed rice. Let it cook slowly under low heat. until  almost all the water is drained
4.Add some turmeric  as a yellow coloring agent  to 1/2 the rice.
5 Lightly mix the whole rice together..that is the  yellow section and white section, then serve together  with chicken, and serve.
