  INGREDIENTS  2 cups all purpose flour  1 cup sugar 1/4  cup milk 4 eggs  1/2 cup margarine  1cup oil 2 freshly grated carrots (1 cup) 1tsp baking powder  1/2 cup raisins PROCEDURE   1.In a large bow mix together  the 2 cups of flour, baking powder and salt. 2. In another bowl whisk the margarine  and sugar  until  light and fluffy, then beat in the eggs one at a time...add in the vanilla essence  and whisk for everything to come together. 3.Add oil and milk  mix well then in batches  mix in the flour    whisk until smooth (no lumps should be seen) 4.Add in the grated carrots and raisins..  and mix everything  nicely.  5.   INGREDIENTS 5 big potatoes 1tsp oil 2 cloves( crashed) 1/2 green bell pepper 3 tomatoes (puree) 1tsp tomatoe paste black pepper salt to taste coriander leaves PROCEDURE . 1.peel the potatoes wash and slice lengthwise and pat dry. 2.Heat oil  in a big pan  and fry the potatoes for about 4 minutes take out and let cool for 5 minutes  as the oil heats .Again deep in the potatoes  and fry for 2 minutes,drain and set aside. 3.Heat a  tsp of oil and saute the  onions until translucent 4.Add garlic and  the green  bell pepper and mix well for 30 seconds. INGREDIENTS  3 cup of all purpose flour   3 tablespoons of sugar   3/4 cup of milk    2 tablespoons of desiccated coconut Honey 2 eggs   INSTRUCTIONS . 1.   INGREDIENTS 5 large potatoes 2 chopped onions 2 cloves garlic 1/2capsicum ( red and green) 1tsp soy sauce 1tsp  rosemary 1tsp thyme 1tsp paprika 1/2tsp pepper salt to taste 1tsp butter   PROCEDURE    1. Peel the potatoes, wash and cut into small cubes( sizeable) 2. Fry the onions until they are translucent, then set aside 3. in the same pan, melt the butter and add the  potatoes stir well 4.   INGREDIENTS 5 big potatoes 1tsp olive oil salt to taste 2tsp black pepper ( optional) 2 meduim chopped  onions INSTRUCTIONS 1.wash the potatoes  and slice into round thin shapes. 2 Deep fry the potatoes drain and set aside. 3.In a large pan, heat oil  and cook the onions to a translucent texture  then add salt and black pepper 4.Finally add in the potatoes  and stir until everything is well  coated. . then garnish with coriander and serve.

  INGREDIENTS   3 chopped onions 3 cloves of garlic (crushed) 3 chopped tomatoes coriander 500 grams omena  1 cup milk/coconut milk Oil INSTRUCTIONS 1. Thoroughly wash the omena and boil in  salty water..  drain and set aside 2. Heat oil in a big sufuria and deep fry the omena.. till  crunchy  and to a  brown  colour.. Drain the excess oil and set aside 3. Heat a little amount of oil..  and fry the onions.. when its almost done to  a golden brown colour,add the garlic and stir until fragrant 4. INGREDIENTS   500grms peas 500grms corn (soft) potatoes (enough) pumpkin leaves(3 ) 1tsp butter 2 chopped onions 1tsp oil INSTRUCTIONS 1.Put in together the peas and corn  and bring to a boil until soft.. 2. In another pan boil the potatoes until they are soft and easy to mash, then mix it with the corn and peas. 3. Steam the pumpkin leaves..when it's done, add it to the potatoes  peas and corn mixture and mash until everything is well combined and soft. 4. Add in a tsp of butter and  mix well 5. Now fry the onions in a little oil until they are golden brown and crunchy 6. Add in the onions into the mashed potatoes, mix well and serve warm.
