Kienyeji chicken wet fry (tenderized naturally spiced )

  INGREDIENTS  1 whole chicken 3tsp oil 1 chopped onion 3 cloves of garlic 1tsp ginger 3 tomatoes coriander leaves salt to taste INSTRUCTIONS 1.Boil the chicke in lots  of water with whole  ginger and garlic  until soft..Drain, and remove the whole ingredients. slightly deep fry the chicken  for 2 minutes and set aside. 2.In a large  pan,  cook the onions until they are golden brown 3.Add in the  crashed garlic and ginger..  stir and let it cook 4Add in the  tomatoes, cook until  everything is well done. 5.Go  in with the chicken, stir it well and let it simmer under low heat Garnish with coriander cover for about a minute and serve    This delicacy can be best served with ugali. chapati. rice..fries or as desired  enjoy

Simple and Moist Vanilla cake

  INGREDIENTS 2 cups all purpose flour ( extra for the baking tin. 1tsp baking powder 1/2 tsp salt 1/2 cup sugar 4 eggs( at room temperature) 1 cup milk 1cup oil or margarine  1tsp vanilla essence. PROCEDURE   1.In a large bow mix together  the 2 cups of flour, baking powder and salt. 2. In another bowl whisk the margarine  and sugar  until  light and fluffy, then beat in the eggs one at a time...add in the vanilla essence  and whisk for everything to come together. 3.Add oil and milk  mix well then in batches  mix in the flour    whisk until smooth (no lumps should be seen) 4. Preheat the oven for 10 minutes  at  180 degrees. Meanwhile Butter the baking tin and  dust with flour tapping out the excess. 5.Put in the  cake mixture  in the baking tin.. Let it bake for 40 minutes until the cake is lightly browned on top.. and a toothpick inserted in the middle comes out clean.   Let it cool ...

Lemon cake( simple )

  INGREDIENTS 2 cups all purpose flour ( extra for the baking tin. 1tsp baking powder 11/2 tsp salt 1/2 cup sugar 1 cup margarine 3 eggs( at room temperature) 1 cup buttermilk( mala) 1tsp vanilla essence. 1tsp grated lemon 1 cup butter milk 1/4 cup lemon juice PROCEDURE   1. In a large bow mix together  the 2 cups of flour, baking powder and salt. then sieve 2. In another bowl whisk the margarine  and sugar  until  white and fluffy, 3.  beat in the eggs one at a time...add in the vanilla essence  and whisk for everything to come together 4. Add in  the dry ingredients gradually  .mix in the flour  whisk until smooth 5.Add the lemon juice and lemon Zest 6.Add the butter milk bit by bit.. and whisk for everything to be well combined 7.Preheat the oven for 10 minutes  at  175 degrees. Simple Garlic potatoe wedges

  INGREDIENTS 5-8 medium sized potatoes Parsley  1tsp paprika  1tsp Black pepper   1tsp Salt to taste 2 tsp olive oil 4 cloves garlic( crushed) INSTRUCTIONS 1. wash the potatoes  well  and  slice into wedges 2. Marinate the potatoes  in a mixture of parsley,paprika,black pepper, salt, garlic and olive oil.Let it sit for about an hour 3. Nicely arrange the potatoes on a  baking tray     (dont overcrowd  them) 4 Bake for 20 minutes, turn them over one by one  and bake for another 20 minutes  5 Serve as Desired          Enjoy😋

Stir Fry Potatoes (Simple)

  INGREDIENTS 5 large potatoes 2 chopped onions 2 cloves garlic 1/2capsicum ( red and green) 1tsp soy sauce 1tsp  rosemary 1tsp thyme 1tsp paprika 1/2tsp pepper salt to taste 1tsp butter   PROCEDURE    1. Peel the potatoes, wash and cut into small cubes( sizeable) 2. Fry the onions until they are translucent, then set aside 3. in the same pan, melt the butter and add the  potatoes stir well 4. Add the thyme , rosemary,and paprika , let it cook on medium heat..the season with salt and pepper 5. Add in the capsicum ,onions and soy sauce. 6. cover and let simmer for 3 minutes then garnish with coriander  and serve.   

Yummy Saute Potatoes

  INGREDIENTS 5 big potatoes 1tsp olive oil salt to taste 2tsp black pepper ( optional) 2 meduim chopped  onions INSTRUCTIONS 1.wash the potatoes  and slice into round thin shapes. 2 Deep fry the potatoes drain and set aside. 3.In a large pan, heat oil  and cook the onions to a translucent texture  then add salt and black pepper 4.Finally add in the potatoes  and stir until everything is well  coated. . then garnish with coriander and serve. 

Tasty And Delicious Omena/Dagaa

  INGREDIENTS   3 chopped onions 3 cloves of garlic (crushed) 3 chopped tomatoes coriander 500 grams omena  1 cup milk/coconut milk Oil INSTRUCTIONS 1. Thoroughly wash the omena and boil in  salty water..  drain and set aside 2. Heat oil in a big sufuria and deep fry the omena.. till  crunchy  and to a  brown  colour.. Drain the excess oil and set aside 3. Heat a little amount of oil..  and fry the onions.. when its almost done to  a golden brown colour,add the garlic and stir until fragrant 4. Add the tomatoes  and salt to taste.. let it cook  until everything is well done. 5. Go in with the omena.mix well  cover for 5minutes to let everything come together 6. Add the milk  bring to a boil for 15 minutes under low heat 7. Add  coriander  mix well cover and simmer for 2minutes and serve               Serve with warm ugali and greens😋...
