Moist Carrot Cake

 


INGREDIENTS 

2 cups all purpose flour 

1 cup sugar

1/4  cup milk

4 eggs 

1/2 cup margarine 

1cup oil

2 freshly grated carrots (1 cup)

1tsp baking powder 

1/2 cup raisins


PROCEDURE 

1.In a large bow mix together  the 2 cups of flour, baking powder and salt.


2. In another bowl whisk the margarine  and sugar  until  light and fluffy, then beat in the eggs one at a time...add in the vanilla essence  and whisk for everything to come together.


3.Add oil and milk  mix well then in batches  mix in the flour    whisk until smooth (no lumps should be seen)

4.Add in the grated carrots and raisins..  and mix everything  nicely. 


5. Preheat the oven for 10 minutes  at  180 degrees. Meanwhile Butter the baking tin and  dust with flour tapping out the excess.
5.Put in the  cake mixture  in the baking tin.. Let it bake for 40-50 minutes until the cake is lightly browned on top.. and a toothpick inserted in the middle comes out clean.


  Let it cool for 20 minutes  and  serve with a drink.
